Simple and Delicious Blueberry Muffins
This Blueberry Muffin recipe is for you if you don't have a lot of time to spend in the kitchen
but you have some fresh berries and you have people who would love some tasty muffins.
Preheat the oven to 400
Either grease the pan or use paper muffin cup liners or use silicone muffin pans.

Mix the dry ingredients in a medium size bowl:

1 1/2 cups flour

3/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

Mix the liquid ingredients into a measuring cup (1-cup):

1/3 cup vegetable oil

1 egg
-
enough milk to fill the cup

Mix the wet ingredients into the dry ingredients

Gently stir in 1 cup of blueberries

Pour the batter into the muffin cups

Bake in the oven for 20 or 25 minutes.
Watch for the tops to get golden brown.
Cool on a rack for 5 minutes then remove from the pan.
I am using a silicone muffin pan. You don't have to grease the pans. The muffins come out clean and easy and the pans are simple to rinse clean.
